When you think of a delicious and tasty cake you may believe that it cannot be done without at least one ingredient: common wheat flour or meal. But nothing could be further from the truth. There are multiple and effective alternatives to flour from which to choose. Today we will show you the bananita’s alternative.

This meal is made of green bananas. Its production process covers different stages. The most important steps, to achieve this great gluten free flour, are:
1º. Wash and peel the green bananas
2º. Dehydrate or dry the peeled bananas
3º. Grind the dehydrated or dried bananas
4º. Sift the banana flour

After this brief introduction of our key ingredient, now here it comes the desired recipe:
Gluten free vegan banana bread
The ingredients you need to make this moist cake are the following:
✓ 4 ripe bananas
✓ 1 egg
✓ 1 ½ cups banana flour (190 g)
✓ ½ cup granulated sugar (100 g)
✓4 tablespoons olive oil
✓1 teaspoon baking powder
✓1 teaspoon baking soda
✓ 1 teaspoon cinnamon
✓ 1 teaspoon vanilla extract
✓ ¼ teaspoon salt
The steps to enjoy it are:
1º. Preheat the oven to 180°C
2º. Prepare a silicone cake mould for the bread dough. You can also use a loaf pan, but in this case you need to line it with parchment or bakery paper. Remember to cut this piece of baking parchment larger than the base of the tin so it can cover the sides when placed inside.
3º. Put the bananas in a large bowl and mash them with a fork.
4º. Add the flour*, baking powder, sugar, olive oil, egg, baking soda, salt, cinnamon, and vanilla.
5º. Stir all the ingredients until they are all mixed.
6º. Spoon the dough into the silicone mould or loaf pan.
7º. Put it in the oven and bake for 30 minutes. When it looks well risen and golden** … The bread is cooked!.
8º. Cool it in the mould or pan for 10 minutes. Then remove it from the mould/pan to a wire rack to cool completely.
9º. Slice it and enjoy!
Recipe notes:
*Sieve the flour to get a fluffier mixture.
**A trick to know when baking: insert a toothpick in the middle of the bread, and if it comes out clean, it´s ready to eat.
As a curiosity, banana bread is a recipe with a centuries-old history that even has its own national day in America (23rd of February). But, ironically, it seems that this bread did not become popular thanks to bananas, but by the use of baking soda and baking powder in the 1930s.
